Pan-cupcakes! Puncakes... Pupcakes?

Whatever you want to call them, I made pancakes in cupcake form.  There were 3 different flavors; blueberry, chocolate chip, and then of course, BACON.  :)  I came up with the idea randomly yesterday while Chris and I were watching 'Cupcake Wars' on TV with my mother-in-law, and since she had all of the ingredients, I went ahead and made them!  The maple frosting was made completely from scratch, and tasted delicious!  I took several to my meeting last night, and share them with my friends.  Reviews were good.  :)  I even had one person tell me that, weirdly, they tasted like corn muffins... when it was more the texture that made them resemble that...  Recipe will follow the pictures, so without further ado...

I followed the recipe for pancakes on the side of the Bisquick box.  You can do this with any pancake recipe, and stir in whatever you like as the filling.  As mentioned before, I chose fresh blueberries, chocolate chips and chopped bacon.

For the frosting, I found a recipe on cooks.com and followed it.

3/4 c. brown sugar
1 egg white
2 1/2 tbsp. water
1/4 tsp. maple flavoring
Cook sugar, water, egg white in double boiler beating constantly until it forms peaks. Remove from heat, add flavoring. Beat until of spreading consistency. Frosts two 8 inch layers.

Monkey Cupcakes! (Let me introduce myself...)

So all of my friends have been starting their own blogs lately, and I keep wondering to myself if I should start one as well.  I've come to the decision (obviously as you can see) to go ahead and follow the pack.  Coming up with a subject for my blog took a little bit, but today I had the idea to start one where I can show off all of the different confections that I like to make.

For the past couple of years, I have been experimenting with different cakes, cookies, and cupcakes.  I regret not taking pictures of them all, but I hope to change all of that with this blog.  I plan to start out with different ideas that I come up with to make, as well as recreate things so that I can take pictures of them.  At some point, probably when I run out of ideas, I will gladly take suggestions and try to make what *you* can come up with.

Today, I would like to present to you the monkey cupcakes that I made with my sister-in-law for my niece's 2nd birthday party.  She loves monkeys, so Cassie found a recipe in a magazine for these monkey cupcakes that we followed.  Without further ado...




And the girls of the bunch (my favorites... possibly because I decorated them  :P )



They're super easy to make!  All you need (for 2 dozen cupcakes) is the following:

1 box of cupcake mix (whatever flavor you want, banana would be a great flavor for these!)
1 tub of frosting (either chocolate, peanut butter, or white frosting with brown food dye)
12 Nutter Butter cookies (with the peanut butter scraped out, and the halves cut in half...ears)
24 Vanilla Wafers (1/4 cut off)
48 Candy Buttons (eyes)
Variety pack of gel icing (to decorate with)
Imagination!
